Deep in the forests of Småland lies a well-kept secret. In a small dairy outside Ormaryd, Sweden’s best Eldost is made — softer, creamier and with a golden crust that draws visitors long before they reach the farm shop.
Dusk settles over the Småland forests as I turn onto the gravel road towards Margaretelund in Ormaryd. The dairy and farm shop glow warmly in the winter dark. The smell of freshly fried cheese and newly brewed coffee meets me as the door opens.
This is where Eldost is made — a name that has become familiar to cheese lovers across Sweden. Eldost is a trademark owned by Föreningen Sveriges gårdsmejerister, and at Margaretelund it is made with milk from Slättna farm, just outside Eksjö.
What makes this Eldost special is the ambition to make it softer and creamier than many others. It takes more work, more fingertip feeling and a craft in which every step matters — from the acidification to the shaping of the curd.
The result reveals itself in the pan. Eldost should be eaten freshly fried — warm, soft inside and with a proper crust that gives both flavour and bite. It is just as good in a simple bread roll as on a plate with greens, herbs and mustard.
Before the current farm shop existed, people came to the family home in Björkenäs to buy Eldost. Interest grew, the rumour spread, and demand became one of the reasons a larger shop eventually took shape.
To visit Margaretelund is to understand why Eldost has become a favourite. Here, craft, forest and farm life meet in something that feels both small-scale and self-evident — and tastes all the more memorable.
